She later moved to Iceland where she lived the greater portion of her adult years and worked in her field of studies as a research chemist.

Peggy is very much a people’s person and found research to be unrewarding and boring.  She switched career and became a restaurateur in Iceland, where she successfully owned and operated a total of 13 restaurants and was consequently crowned the queen of restaurants.   She immigrated in 1994 to Canada as an entrepreneur with her 3 daughters. She fell in love with the Fraser Valley the first time she drove east of Surrey, because it reminded her of the Cumberland Valley and the Amish community where she lived in Pennsylvania. She moved two years later to Chilliwack and has since owned and operated the Country Kitchen Restaurant, Mountain View Bakery and most recently Chez Paris Bistro in downtown Chilliwack.
